 Easy Vadai பாசி வடை 

Ingredients:

1. Moongdal sprouts - 1 cup

2. Green chilli - 2 or 3

3. Ginger - 1 inch cube

4. Finely chopped oinion - 1 Tbsp

5. Finely chopped coriander leaves

5. Salt to taste


Method:

Grind the ingredients 1 - 3 into a coarse paste. Add chopped onion, coriander leaves and salt. Deep fry the vadas of your favourite shape preferebly in goundnut oil. 

Your favourite and healthy vadas are ready to eat now. It goes fine with coconut chutney.




Laddoo Recipe

 Ingredients:

Gram flour  3 cups

Sugar            2.5 cups

Cardamom   7 pieces

Cashew nuts 50 g

Ghee      half  cup 

Salt         a pinch

Ground nut oil 1/2 litre


Method:


Prepare a batter with gram flour a pinch of salt and water. The consistency must be equivalent to a dosa batter. Put Kadai on the stove heat oil and prepare boondhis with the help of Boondhi karandi or kannu karandi. 

In a heavy bottom vessel add sugar and water. Water to be just to the level of sugar. Put it in a stove in medium flame and stir well. Boil it and take the liquid in between the thumb and index finger. It should form a single layer and break. That is the proper patham. 

Put all boondhis into the sugar syrup and stir well. Take one-fourth of the quantity into a mixing jar and just grind once in pulse mode. Add it to
the boondhi vessel. Fry the broken cashews in Ghee and add it to the mixture. Add Cardamom powder. Prepare balls of your favorite size. 

That's all your favorite Laddoos are ready to eat.

Green  Upma 


Ingredients :

1 cup Samba Wheat Rava

5 to 7 medium size Sambar Onion 

1 handful of cashew nut

1/2 tsp mustard seeds

4 Tbsp Ghee

7 or 8 Curry leaves

1/2 bunch of Coriander leaves

4 green chilies 

Lemon juice squeezed from 1 and a half medium-sized lemons 

salt to taste


Method: 

Take a Kadai. Put it on the stove and add 1 spoon of ghee. roast the coriander leaves and green chilies for 2 to 3min. Let it cool and grind it into a fine paste. 

In the same Kadai add 3 Tbsp of ghee. Add mustard seeds and curry leaves. Add cashew nuts and chopped onions. Fry it nicely and add 1 cup of wheat rava and stir well. Add two cups of water and allow it to boil. Add salt and when it is cooked fully pour the lemon juice and mix thoroughly. 

Your tasty upma is ready.  

P.S: 

Those who do not like ghee can try it with coconut oil.

Thadumal Kanji - My Mom's signature Dish





Kanji Preparation 

Ingredients:

1. Rice                                          - 1cup 

2. Water                                       - 10 cups ( to prepare in the normal vessel) 

 

   5 cups ( for  pressure cooking)

3. Garlic                                      - 20 to 25 small size

4. Fenugreek Seeds                       - 1 tea spoon

5. To season                                 - mustard seeds, jeera and curry leaves

6. Coconut Oil                             - 1 tsp

7. to prepare paste                         - coconut 3 inch slice, pepper 1 tsp , jeera 1/4 tsp

 

Method

Pour water to a vessel and add Rice when the water goes to boiling condition. Add garlic and fenugreek when the rice is half cooked. When everything is cooked completely and become a porridge consistency, add the coconut paste, saltto taste and cook for 2 to 3 minutes.

Season it with 1 tsp coconut oil, mustard seeds, jeera and curry leaves. Serve hot.

 

It’s a very good home remedy for cold and cough. 

The Kanji tastes good with the Thogaiyal. 

Thogaiyal Preparation

Dry roast black urad dal, grated coconut. Fry red chilli and curry leaves in oil.  Add salt to taste and add a small piece of tamarind. Grind everything and enjoy your Kanji with this tangy thogaiyal.
